Only the final digit of the total counts, so a 6 and a 7, adding up to 13, counts as 3.
Sometimes one or both hands will receive a third card. The third card is determined by a rule that is pretty complicated, but you don't have to learn it. The baccarat software knows the rule and will deal out a third card when it is called for.
